Goats' Milk Lactoperoxidase System Against Listeria monocytogenes

Abstract

A significant decrease in the counts of three Listeria monocytogenes strains was observed in activated lactoperoxidase (LP) system goats' raw milk at refrigeration temperatures during 1-9 d. Inhibitory activity of the LP system on L. monocytogenes depended on temperature, length of incubation, and strain of L. monocytogenes tested. LP system only retarded growth of L. monocytogenes at 20°C in goats' raw milk. Lactoperoxidase was more stable in activated LP system than in control milk at refrigeration temperatures and at 4°C than at 8°C.
